Walnut Meringue

Winter is here, we would like to change from the traditional meringue so why not... a walnut meringue?

225g of walnuts

175g of Powdered Sugar

125g of confectioner sugar 

4 egg whites 

Preheat the oven to 350 degrees. 

Mix the walnut kernels with the icing sugar. 

On a baking sheet lined with baking paper, spread the walnuts and bake for 8 minutes, stirring in the middle. Remove from oven and coarsely chop. 

Whisk the egg whites, add the powdered sugar and whisk again. Gently fold in the chopped caramelized walnuts with a spatula. 

Put the preparation in a pastry bag, and place the meringues on a greased and lightly floured plate. Bake for 2h30 at 200 degree F, watching the cooking. Leave the meringue to cool before removing them from the pan.
